What it changes in the music

The surrounding pattern creates the expectation that makes syncopation audible. A displaced clap can sound anticipatory after a familiar backbeat has been established. Without that reference, the listener may simply hear another pattern. Syncopation can come from onset placement, duration or omission, not only from adding notes between kicks.

A small experiment

Establish claps on beats two and four for several repetitions. Move only one final clap an eighth note earlier and compare the sense of anticipation.

Keep this distinction clear

An offbeat event is not automatically a meaningful surprise. Its effect depends on the rhythmic pattern the listener has learned to expect.
